  3. Whip the Egg Whites: In a medium bowl, use a hand mixer to beat the egg whites until stiff peaks form. Set this bowl aside.
  4. Mix the Wet Ingredients: In a separate medium bowl, whisk together the egg yolks, vegetable oil, milk, and vanilla extract.
  5. Combine: Pour the wet egg yolk mixture into your large bowl of dry ingredients. Mix well until combined.
  6. Fold the Whites: Gently fold the stiff egg whites into your batter using a spatula. Do not overmix! It is perfectly okay if the batter is a little lumpy.
  7. Cook: Pour the batter onto your hot waffle iron. Cook according to your manufacturer’s directions until golden and crispy.

How to Store and Reheat Leftovers

If you have leftover waffles, you can store them in an airtight container in the refrigerator for a couple of days. You can also freeze them in freezer-safe bags for a few weeks!

Do not reheat these in the microwave! A microwave will make them soggy. To keep your waffles perfectly crispy, place them directly on the oven rack and heat them at 250°F for about 10 minutes.
