Waffles are the ultimate weekend breakfast staple. There is nothing quite like cutting into a perfectly golden, crispy exterior to find a light, fluffy center—especially when those deep pockets are overflowing with melted butter and warm syrup!

While getting waffles at your favorite diner is always a treat, making authentic Belgian waffles at home is surprisingly easy. You don’t need a culinary degree; you just need a Belgian waffle maker and a few pantry staples.

Here is exactly how to make the best homemade Belgian waffles you will ever eat!

What Makes a Belgian Waffle Different?

Belgian waffles are famous for their extra-deep pockets and incredibly airy, light texture.

Traditionally, this fluffy interior was achieved by using yeast. However, our modern recipe speeds up the process by using baking powder and a special egg technique. By whipping the egg whites separately and gently folding them into the batter at the very end, we create that signature, cloud-like texture!

(Note: Because of this specific texture requirement, you cannot just use standard pancake batter in a Belgian waffle maker!)

Ingredients You Will Need

  • All-Purpose Flour: 2 ¼ Cups
  • Baking Powder: 1 Tablespoon
  • Granulated Sugar: 3 Tablespoons
  • Salt: ½ Teaspoon
  • Ground Cinnamon: 1 Teaspoon
  • Large Eggs (Separated): 2
  • Vegetable Oil: ½ Cup
  • Milk: 2 Cups
  • Vanilla Extract: 1 Teaspoon

Step-by-Step Instructions

  1. Preheat the Iron: Preheat your Belgian waffle iron and spray it generously with non-stick cooking spray.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
  3. Whip the Egg Whites: In a medium bowl, use a hand mixer to beat the egg whites until stiff peaks form. Set this bowl aside.
  4. Mix the Wet Ingredients: In a separate medium bowl, whisk together the egg yolks, vegetable oil, milk, and vanilla extract.
  5. Combine: Pour the wet egg yolk mixture into your large bowl of dry ingredients. Mix well until combined.
  6. Fold the Whites: Gently fold the stiff egg whites into your batter using a spatula. Do not overmix! It is perfectly okay if the batter is a little lumpy.
  7. Cook: Pour the batter onto your hot waffle iron. Cook according to your manufacturer’s directions until golden and crispy.
  8. Serve: Serve immediately with butter, syrup, powdered sugar, or fresh fruit!

How to Store and Reheat Leftovers

If you have leftover waffles, you can store them in an airtight container in the refrigerator for a couple of days. You can also freeze them in freezer-safe bags for a few weeks!

Do not reheat these in the microwave! A microwave will make them soggy. To keep your waffles perfectly crispy, place them directly on the oven rack and heat them at 250°F for about 10 minutes.
